Warnings - Built-in ovens
It is most important that the instruction book should be retained with the appliance for future reference. Should the appliance be sold or transferred to another owner, or should you move house and leave the appliance, always ensure that the book is supplied with the appliance in order that the new owner can be acquainted with the functioning of the appliance and the relevant warnings. These warnings are provided in the interest of safety. You must read them carefully before installing or using the appliance.
This appliance is designed to be operated by adults. Children should not be allowed to tamper with the controls or play with the product. Any installation work must be undertaken by a qualified electrician or competent person. It is dangerous to alter the specifications or modify the product in any way. This appliance should be serviced by an authorized Network Service Centre, and only genuine spare parts should be used. Cookers become very hot with use, and retain their heat for a long period after use. Children should be supervised at all times and should not be allowed to touch the hot surfaces or be in the vicinity when in use or until the appliance has cooled after use. Always ensure that the control knobs are in the "off" position when not in use. For hygiene and safety reasons, this appliance should be kept clean at all times. A build-up of fats or foodstuffs could result in a fire. This appliance has been designed for cooking edible foodstuffs only, and must not be used for any other purposes. Never line any part of the oven with aluminium foil.
Easy clean liners should never be cleaned with any other than soapy water (see cleaning instructions). Before any maintenance or cleaning work is carried out on the appliance, always turn off the isolator switch at the cooker point, and allow to cool. Ensure that the anti-tip oven shelves are put in place in the correct way (see instructions). This oven is made to function at 230 V single phase with neutral. A polyphase linking without neutral (400 V) can induce the distruction of the oven. Under no circumstances should you attempt to repair the appliance yourself. Repairs carried out by inexperienced persons may cause injury or serious malfunctioning. Refer to your local Service Centre. Always insist on genuine spare parts.

Instruction for the user
Installation
Installation and initial adjustment of your oven MUST be carried out by qualified personnel in compliance with current regulations. Specific installation instructions for the installer are given in this booklet. OVEN DOOR PROTECTION DEVICE All our appliances comply with the European Safety Standards. Nevertheless, in order to ensure the highest safety level, and avoid little children to be exposed to the heat when the appliance is operated, it is possible to fit a special protection device to the oven door. This device can be purchased in our Service Force Centres, specifying the relevant code ( 3 5 7 9 1 ) and the Product No. shown on the rating plate. Fitting instructions are provided with the kit package.
Initial operation of the appliance
Before using the appliance, carefully remove the special protective film covering the stainless-steel and anodised aluminium parts. Clean the oven and its accessories with water and detersive. Insert the trays and the grill into their respective runners. Warm the oven (EMPTY), to maximum heat, for about an hour and with the selector knob in the position, then for about 15 minutes in the position. The smell that is set free cannot be avoided. It is formed on the outside of the oven chamber and will completely disappear when the oven has been used a few times. During oven cooking and grilling, the appliance door and the surrounding parts are warmed up to a very high temperature. Be careful and keep children away from the appliance while you are using it. When you connect other appliances to a plug near the oven, check carefully that the wire does not touch warm parts of the oven and does not get taken in the oven door.

Control knobs
Oven Function Control knob (Fig. 1) and Thermostat Control knob (Fig. 2) They enable to select the most appropriate type of heating for the different cooking requirements by appropriately connecting the heating elements and adjusting temperature to the required level. Operation
Traditional cooking Turn the oven function control knob to the position, then turn the thermostat knob to the desired temperature setting. If a variation of the heating is required on the top or bottom of the meals being cooked, turn the oven function position (top heating control knob to the element) or (bottom heating element). Grill cooking Turn the oven function control knob to or , then turn the thermostat control knob to the required temperature setting. With the oven function control knob in the position we obtain the maximum power and a uniform grilling on the whole surface exposed.
58
Grill element and fan Turn the oven function control knob to the position, then turn the thermostat knob to the desired temperature setting (max 200°C). Convection cooking Turn the oven function control knob to the position, then turn the thermostat knob to the desired temperature setting. All the cookings must be carried out keeping the oven door shut. Defrosting Turn the oven function control knob to the position. Thus activating the fan, which causing the cold air to circulate, helps to rapidly defrost frozen foods. With the oven function control knob (fig.1) in the position, turn the oven thermostat knob (fig. 2) to the q position. Oven thermostat control light This light goes off when the oven heats up to the temperature set and comes on again every time the thermostat cuts in to stabilize temperature. Operating control light It indicates that one or more of the heating elements are turned on.
Safety thermostat In order to avoid excessive overheating due to incorrect use of the appliance or else to a faulty component, the oven is equipped with a safety thermostat which cuts off the power supply if necessary. Operation is restored automatically when the oven temperature decreases to normal values. Therefore, if the thermostat cuts in because you have not been using the appliance correctly, the oven can be used again simply by waiting for the appliance to cool down. If, instead, the thermostat cuts in because of a faulty component, you should call the Service Department. Cooling fan The purpose of the fan is to cool the control panel, the knobs and the oven door handle. The air stream flows out between the control panel and the oven door handle. To ensure proper cooling, the fan will continue to operate even after the oven is turned off, until normal temperature levels have been reached. Self-cleaning panels (optional accessory kit) On the interior walls of this oven model it is possible to fit self-cleaning panels. At normal cooking temperatures these panels cause the fat splashes to turn into a fine residual powder which should be removed using a damp sponge when the oven is cold, to ensure that the panel's surface continues to remain porous and thus "self-cleaning". The self-cleaning panel kit also includes the bottom tray. This must be placed inside the oven when cooking with hot air convection and grill heater.
59
Cooking with the multifunction oven
This type of oven enables to carry out normal cooking, hot air convection cooking and cooking with grill heater and hot air fan combination; in this manner it is possible to obtain the most suitable type of cooking.
Some hints
For baking cakes Cakes require a moderate temperature (normally between 150 and 200°C). In addition, the oven must be heated up beforehand - for about 10 minutes. The oven door should not be opened before at least 3/4 of the set cooking time is up. Normal short pastry dough should be cooked in a mould or tin for 2/3 of total cooking time required and then garnished as desired before being cooked completely. Clearly, the remaining cooking time depends on the type of garnish used (jam, fruit, etc.). Care should be taken to ensure that any dough and cake mixes are of the right consistency since an unduly moist mix lengthens cooking time unnecessarily. The raw dough or mix should therefore be fairly difficult to detach from the spoon or beater. If three shelves are filled with cakes and tarts simultaneously, it is advisable to slot in an extra shelf between the two lower shelves (Figure 3). For cooking meat and fish Meat cooked in the oven should weigh at least 1 kg to prevent it from becoming too dry during cooking. Very tender red meat to be cooked rare, i.e. well cooked on the outside but extremely juicy inside, requires high-temperature cooking (200-250°C). White meat, poultry and fish instead require low-temperature cooking (150-175°C). The ingredients for the accompanying sauce or gravy should be put in the baking pan at the very beginning only when cooking times are short. Otherwise they should be added during the last half hour. A simple way of checking whether meat is done or not is to press it with
Normal cooking
Heat comes from the top and from the bottom, therefore it is preferable to use the central runners. If cooking requires more heat from the top or from the bottom use the top or the bottom runners.
Convection cooking
The food is cooked by means of preheated air force blown evenly round the inside of the oven by a fan set on the rear wall of the oven itself. Heat thus reaches all parts of the oven evenly and fast and this means that you can simultaneously cook different types of foods positioned on the various oven shelves. Convection cooking ensures rapid elimination of moisture and the dryer oven environment stops the different aromas and flavours from being transmitted from one food to another. The possibility of cooking on several shelf heights means that you can cook several different dishes at the same time and up to three tins of biscuits and mini pizzas to be eaten immediately or subsequently deep frozen. Naturally the oven can also be used for cooking on just one shelf. In this case you should use the lowest set of runners so that you can keep an eye on progress more easily. In addition, the oven is particularly recommended for sterilizing preserves, cooking home-made fruit in syrup, and for drying mushrooms or fruit.
60
a spoon; if the meat does not yield under this pressure it means that it is done to a turn. In the case of roast beef and fillet steaks, the inside of which should remain fairly pink in color, cooking times must be short. The meat can be cooked in a baking pan or else directly on the shelf - in this case a dripping pan must obviously be placed underneath the shelf to collect the juice. The shelf can be inserted with its face either upwards or downwards (Figure 4). Should you cook very fat food, place the meat directly on the grill and the grill over the dripping pan in order not to dirty the oven. Once the meat is cooked, it is advisable to let it rest for at least 15 minutes before carving so that the juice does not seep out. To prevent the formation of too much smoke in the oven during roasting, it is a good idea to pour a little water into the dripping pan and--to prevent steam--to add a little bit more during cooking if the original amount dries up too much. Before serving, the various courses can be kept hot in the oven which should be turned down to the minimum temperature. Cooking with grill element and hot air fan combination This particular type of cooking is based on the utilization of both the grill heater and the hot air convection fan. This type of cooking enables heat to penetrate gradually inside the food without exposing too long the surface to direct grill exposure. Suitable for: thick meats; game birds, and poultry. Grill cooking Heat comes from the top suitable for pork chops, veal Position cutlets, toasts. Position suitable for great quantities of meats.
Useful hints for grill-cooking and cooking with grill element and hot air fan combination Except for some lean game meats and meat rolls, nearly all kinds of meat may be cooked on the grill. Meat and fish to be grill cooked should be lightly oiled and always placed on the grill; this should be on runners nearest or further away from the grill heater, according to the thickness of meat so as to avoid burning it on the surface and cooking it insufficiently inside. The wire shelf may be used either in the curved-down or in the curved-up position. The dripping pan must be placed on the first runner from the bottom. Some water may be poured in the dripping pan so as to make oven cleaning easier. Cooking must always be carried out with the oven door closed. During cooking the oven light remains on.
Oven fan protecting filter
To prevent unacceptable amounts of fat particles contained in the vapour from penetrating into the fan when roasting meat, it becomes necessary to use the filter supplied which in some models is already fitted on the rear wall of the oven (fig. 5). To remove the filter, pull up the protruding tongue. The filter must be used for cooking meat only.

The dripping pan must be placed on the first shelf from the bottom. 1. For the convection oven, the cooking time shown refer to the first shelf position shown. Shown between brackets are the shelf positions on which other dishes may be cooked simultaneously at the same temperature. 2. If you intend to cook on two different shelf positions, use positions 1 and 3. 3. When cooking on various shelf positions, the cooking times should be increased by about ten minutes to compensate for the greater oven load. 4. In the case of the dishes marked with an asterisk (*), it will be necessary to preheat the oven (these are mostly leavened kneadings). 5. The cooking temperatures shown for meat dishes are the most suitable to ensure the best results. Furthermore, keep in mind that with an oven center temperature above the approx. 180°C value, the cooking oils and fats will burn producing smoke and soil the oven. Choose preferably convection cooking. Attention! - Do not place pans, dripping pans, biscuit pans or aluminium foil on the oven bottom. This could cause a heat build-up which would affect the baking results and damage the oven enamel. Cooking times Cooking times vary according to the type of food to be cooked, its consistency, and volume. We suggest that you take particular note of your first cooking experiments with the oven, since operating in the same conditions for the same dishes you will of course obtain similar results. We have here indicated two cooking charts. The experience gained with this trial and error approach will enable you to make the appropriate changes to values given on charts.

Cleaning and Maintenance
Switch the oven off and let it cool down before any cleaning or maintenance operation. This appliance cannot be cleaned with steam or with a steam cleaning machine. Before carrying out maintenance and cleaning operations, make sure that your oven is disconnected from the mains power supply.
Enamelled parts
The enamel is a hard layer similar to glass and therefore very delicate when using hard and sharp edged objects. The enamel surface may be damaged if hard objects are dropped onto it and the enamel may chip off. Do not cover the inner walls of the oven with tin foil. Do not place plates or similar objects directly on the bottom enamelled surface. These objects compromise the heat distribution and form a barrier to the heat, thus spoiling the outcome of the dish or damaging the enamel. If these instructions are not followed the guarantee condition falls.
General cleaning
Cleaning must be carried out after the oven has cooled down. Wash the enamelled parts with lukewarm water and detergent. Do not use abrasive products, such as steel wool pads, acids etc. since these could damage the various surfaces. Rinse stainless steel parts with water after use, and dry them with a soft cloth or chamois leather. In the case of persistent stains, you can use normal non-abrasive detergents or products specific for stainless steel readily available on the market. Another alternative is a drop of hot vinegar. When cleaning the oven door with the glass top cover use just hot water, taking care to avoid using coarse cloths or abrasive products. When using sprays suitable for oven cleaning avoid using them on the fan, on the thermostat sensor and on the back panel located in the oven interior space. The hot acids of fruit (e.g. Iemons, stewed prunes, etc.) leave difficult-to-remove stains on the enamelled surfaces; this inconvenient may remove enamel gloss, but, it does not impair oven operation. Clean the oven thoroughly after use; in this way it will be possible to remove cooking residuals more easily, thus avoiding these from burning the next time the oven is used. Oven cleaning sprays must not be used on the fan and on the thermostat sensorthat are inside the oven.
Removing the self-cleaning oven panels (optionals)
In order to remove any fatty residue that might be deposited underneath the self-cleaning panels, the latter should be periodically dismantled as follows. Disconnect the appliance from the electric supply. Remove the bottom dripping pan.. Unscrew the side runners (Fig. 6). Pull outwards the lateral panels sliding them out so as to free them from their pins (Fig. 7). Unscrew the back panel (Fig. 8). To avoid damaging the enamel or difficulties in introducing the shelves or the dripping pan, check to see there is a perfect fit between the panel slots and the corresponding pins (Fig.6).
64
Replacing the oven light
Disconnect the appliance from its power supply point. Push in and unscrew the glass cap (Fig. 9). Unscrew the light bulb and replace it with a new heat-proof bulb (300°C) having the following features: - Operative tension: 220/230 V (50 Hz) - Power: 25 W - Fitting: E 14 Reconnect the appliance.
Oven door cleansing
For a better cleansing of the oven door, you are suggested to remove it from the appliance with the following procedure: open tho door completely; lift the small levers placed on the two hinges and turn the levers towarde the inside (Fig. 15). Slowly close the oven door, until it touches the two levers, then push it towards the oven and remove it by pulling it towards the outeide. Place the door on a horizontal level, then remove the screws (Fig16), lift the glass and pull it out. After cleansing the glass, refit it in the door ( Fig.16) and assemble the door again by carrying out the procedure described above backwards. When the two small levers are placed again on the hinges, the door will have been accurately fit.
Cleaning care
The upper element of the oven radiating heat, can be overturned. In order to make the cleaning of the interior part of the oven easier, the upper element radiating heat (upper heat and grill) should be overturned. Loosen the knurled screw (Fig. 17) and overturn the element radiating heat downwards (Fig. 18). At this point the surface of the oven can be cleaned (see "General cleaning care"). Put the element radiating heat back in its place and tighten the screw you have loosened before. Always ensure that the element is in the right place.

Instructions for the installer
The instructions given below are designed specifically for a qualified installer and should aid him or her to perform all installation, adjustment, and maintenance operations with absolute precision and in compliance with all current legislation and regulations. We strongly recommend that all operations for the installation of your cooker be carryed out by Qualified Personnel in accordance with existing rules and regulations. The Manufacturer disclaims any liability in case these accident-preventing rules are not observed. Suitable power supply cables are the following types, considering the respective necessary section of cable. H07 RN-F H05 RN-F H05 RR-F H05 VV-F
Connecting the terminal board Electrical connection
Prior to making the electrical connection, make sure that: -- the protection fuse and the domestic wiring system are suitable to carry the total electric load of the oven (see rating plate); -- your domestic wiring system has an efficient earth connection in compliance with rules and laws in force; -- the wall socket or the omnipole switch used for the electrical connection can easily be reached after the oven is built in. This appliance is delivered without an electric supply cable, therefore, you will have to fit to it a supply cable with standard plug, suitable for the total electric load shown on the rating plate. The plug is to be inserted into a suitable wall socket. If you require a direct connection to the electric network (mains), it will be necessary to fit between the appliance and the mains an omnipole switch, with a minimum gap between contacts of 3 mm, suitable for the required load and in compliance with rules in force. The green & yellow ground wire must not be interrupted by the switch. The supply cable must in all cases be laid out in such a way as to ensure that it does not reach at any given point a temperature 50°C higher than the ambient temperature. The appliance incorporates an easily accessible 3-pole terminal board pre-set for operation on 230V single-phase (Fig.10). The ground cable . After must be connected to terminal connecting the supply cable to the terminal board, secure it with a junction clamp.
66
Building-in
It is important that the dimensions and materials of the surround or cabinet into which the oven will be built are correct and will withstand a temperature increase. A correct installation will have to ensure a proper protection against contact with electric parts or merely functionally isolated parts. All the units meant to ensure protection have to be fitted not to be taken away without using any tool. We recommed not to install the appliance near refrigerators or freezer, since the heat could affect the performance of these appliances. Over-all dimensions of the oven (Fig. 12)
Securing the oven to the cabinet
The recess must have the dimensions shown in Fig. 13. Fit the appliance into the cabinet recess. Open teh oven door and secure the oven to the kitchen cabinet with four wood screws, which fit the holes provided in the oven frame (Fig.14). When installing an electric plate hob over the oven, the hob's electrical connection and the oven's one have to be carried out separately, for security reasons and to let the oven be taken off the unit easier, if necessary.
